Recipe – Gluten Free Fruit Cake

I know this isn’t “breakfast” but I do have a few readers who look for gluten free options and I thought I would share this recipe for a gluten free fruit cake. 


This recipe is adapted from the “Boil and Bake Fruit Cake” recipe in the Golden Wattle cookbook (a staple in many kitchens!). If you want to make this cake with normal flour just substitute!


The gluten free flour used in the recipe was the “Orgran” brand.


With the “mixed dried fruit”- I LOVE glace cherries so I substituted a 1/2 cup of the mixed fruit for glace cherries. You can do this with any fruits – eg if you prefer more peel etc


I used a 20cm spring form cake tin lined and greased at the base and around also around the edge. This recipe would work with a normal cake tin lined at the base.


Ingredients


1 teaspoon mixed spice
1 cup castor sugar
2 cups mixed dried fruit
60 grams butter
1 cup cold water
1/2 teaspoon salt
1 cup plain gluten free flour
1 cup self raising gluten free flour
1 teaspoon bi-carbonate of soda
1/2 cup boiling water


Method


1. Put sugar, fruit, butter, cold water, spice and salt in a saucepan and boil for 3 minutes. Ensure the mixture is stirred.


2. Allow to cool and when cold sift in both flours and mix in with a wooden spoon.


3. Dissolved soda in boiling water and stir into cake mixture until mixture is smooth and even consistency.


4. Put into a prepared tin, bake in moderate over (180 degrees) for 1 hour or until a skewer comes out clean.


I started testing my cake about 50 minutes in with a skewer and I kept a close eye on it from there but it was pretty much spot on for an hour cooking time.
